These pancakes are delicious, wholesome, full of fibre and vitamin B. Breakfast like this will keep you going for hours.
FEEL GOOD BLUEBERRY PANCAKES:
2 cups buttermilk
1tsp lemon zest
2 tbsp agave syrup or xylitol
1 1/2 cup wholemeal spelt flour
1 cup oats
1 tbsp baking powder
1. Mix spelt flour, oats and baking powder.
2. In a separate bowl whisk buttermilk, lemon zest, eggs and agave syrup (or xylitol).
3. Heat non sticking pan. Add wet ingredients to the dry ingredients, mix till combined. Add blueberries and mix gently.
4. Fry in small batches on both sides.
Serve with warm maple syrup. I usually buy a big carton of buttermilk, so when I make them, I serve them with Strawberry Buttermilk Smoothie:
Put all your ingredients in a blender, mix until smooth.
